不同产地骏枣果实性状及营养成分差异性分析 被引量:1

Analysis of fruit characters and nutritional components of‘Junzao’in different habitats

摘要 为研究不同产地骏枣果实物理品质及内在品质的差异,以新疆生产建设兵团第一师、第十四师的骏枣为研究对象,测定物理品质及内在品质共41个指标,采用相关性和主成分分析法进行综合评价。结果表明:不同产地骏枣均为长圆形,单果重18 g左右,果实物理品质及内在品质在部分团场存在显著差异,果实密度变异系数最大;果实矿质元素中各指标变异系数均在10%以上,其中全磷含量变异系数最大;果实风味品质中糖酸比、总酸含量、蔗糖含量变异系数均在10%以上,其中糖酸比变异系数最大;各氨基酸中Pro含量最高,且各氨基酸含量变异系数均在10%以上,其中Tyr、Gly、Ala、Cys含量变异系数较大,均在50%以上;各类氨基酸中SWAA含量最多。果实矿质营养与品质指标间23对指标间存在显著或极显著相关;果实氨基酸间相关系数在0.5以上的有81个,整体表明各氨基酸间的相关性较强,氨基酸与风味品质间有17对指标间存在显著相关,大部分集中在与总糖、蔗糖之间。通过主成分分析法提取出3个主成分,累计方差贡献率达90.3738%,并进行综合评价获得不同产地骏枣果实物理品质及内在品质的综合评价结果,最终得分由高到低为第十四师皮山农场>第十四师47团>第十四师224团>第一师8团>第一师12团>第一师10团。第十四师骏枣综合品质和营养价值均高于第一师。 In order to study the difference of appearance and internal quality of‘Junzao’fruit from different producing areas,the appearance and internal quality of‘Junzao’fruit from 1st and 14th division were determined with a total of 41 indexes,correlation and principal component analysis were used for comprehensive evaluation.There were significant differences in fruit appearance and internal quality in some parts of‘Junzao’,which were oblong in shape and 18 g in weight of single fruit.The variation coefficients of all the indexes in fruit mineral elements were above 10%,among which the total P variation coefficient was the largest,and the variation coefficients of total acid,sugar-acid ratio and sucrose in fruit flavor quality were all above 10%,the content of Pro was the highest,and the coefficient of variation was above 10%.The coefficient of variation of Tyr,Gly,Ala and Cys was the highest,all above 50%.The content of SWAA was the highest in all kinds of amino acids.The results of correlation analysis showed that there were significant or extremely significant correlations between 23 pairs of fruit mineral nutrition and fruit quality indexes,and 81 pairs of fruit amino acids with correlation coefficient above 0.5,there were 17 pairs of significant correlations between amino acids and flavor quality,most of which were concentrated with total sugar and sucrose.Three principal components were extracted by principal component analysis,and their contribution rate was 90.3738%.The results of comprehensive evaluation on the appearance and internal quality of jujube fruit in different places were obtained,the final score was scored by the 14th division,Pishan county farm>the 47th regiment,14th division>the 224th regiment,14th division>the 8th regiment,1st division>the 12th regiment,1st division>the 10th regiment,1st division.The overall comprehensive quality and nutritional value of‘Junzao’from the 14th division are higher than those of the 1st division.
