摘要
“食品化学”课程教学存在内容繁杂且与先修后修课程存在交叉重叠、知识点抽象难懂而过分依赖教师、教材内容跟不上理论知识及工业技术更新等问题,导致学生学习兴趣低、接受知识较为被动、掌握知识点不够深入而难以达到灵活运用知识以发现问题并解决问题的教学目的。文章基于学以致用教学理念就教学团队建设、教学过程设计、教学内容重构及考核方式优化等方面进行了改革探讨,以更好地培养符合社会发展和食品企业需求的高素质应用型专业技术人才。
There are many problems in the teaching of "Food Chemistry"course,such as complicated content,overlapping with the pre and post courses,too much dependence on teachers due to abstract knowledge points,and the content of teaching materials can not keep up with the update of theoretical knowledge and industrial technology.As a result,students have low interest in learning,are passive in accepting knowledge,and the knowledge points are not deep enough to achieve the teaching purpose of fexibly using knowledge to find and solve problems.Based on the teaching concept of"learning for application",this paper discusses the reform of the construction of teaching team,the design of teaching process,the reconstruction of teaching content and the optimization of assessment methods,so as to better cultivate high-quality applied professional and technical personnel who meet the needs of social development and food enterprises.
