摘要 果汁是一种绿色健康饮品,因其原汁原味而备受大众的青睐,正日益成为消费者追逐的热点。综述了果汁的概念与分类,并介绍了目前市场上现有果汁的加工种类及特点,对果汁的加工工艺及其加工过程中采用的技术方法进行归纳总结。从果汁市场的扩大及对产品质量要求的角度进一步探讨果汁加工未来的发展趋势。 Fruit juice is popular among the public because of its original flavor.As a green and healthy drink in the new century,fruit juice is increasingly becoming the hot pursuit of consumers.This paper expounded the concept and classification of fruit juice,and introduces the processing types and characteristics of current fruit juice on the market,and summarized the processing technology and technical methods used in the process of juice processing.The future development trend of fruit juice processing was further explored from the perspective of fruit juice market expansion and product quality requirements.
