摘要
NFC果汁是一种果蔬的非浓缩还原果蔬汁,是一种新型的果汁。从NFC果汁的加工方法与技术对果汁中的营养物质、灭菌方法对果汁品质的影响等方面进行了综述,并探究了新的果汁加工技术——NFC技术在柠檬果汁加工中的运用前景。
NFC juice is a fruit and vegetable non-concentrated reduction of fruit and vegetable juices,is a new type of fruit juice. In this paper,the processing methods and technologies of NFC juice were reviewed. The effects of the nutrients in the juice and the sterilization methods on the quality of the juice were reviewed. The application prospect of the new NFC technology in the processing of lemon juice was explored.
