摘要 目的:综述牡蛎酶解产物的种类、生物活性与应用等方面的研究进展,为牡蛎的进一步开发利用提供科学依据。方法:通过文献检索查询近年来牡蛎的相关研究资料和报道,进行整理归纳总结。结果:牡蛎酶解产物主要有氨基酸、牡蛎多糖及牡蛎多肽,其生物活性包括调节免疫、抗氧化、降血糖、降血压、抗衰老、抗肿瘤、促进伤口愈合等药理作用。结论:牡蛎酶解产物丰富,且具有较广泛的生物活性,在食品、保健食品、海洋生物医药、日用化妆品以及新型饲料添加剂等领域开发具有良好的应用前景。 [Objective]To review the enzymatic hydrolysates of oyster and their bioactivities and application to provide reference basis for development and application of oyster in the future.[Method]We sorted and summarized the corresponding literature by reference to the research relevant reports of oyster of the scholars at home and abroad in recent years.[Result]The main enzymolysis products of oyster are amino acids,polysaccharides and polypeptides,which have many bioactivities,including immune regulation,antioxidation,hypoglycemic,antihypertensive,anti-aging,anti-tumor,and wound healing,and so on.[Conclusion]There are many kinds of enzymatic hydrolysates of oysters and they have a variety of bioactivities.The oyster has a good application prospect in the development of food,health food,marine drug,skin care product and new feed additive.
