近江牡蛎肉水解物的营养成分及抗疲劳作用研究 被引量:25

Study on the nutritional components and the anti-fatigue efects of hydrolysates of ostrea rivularis meat

摘要 实验是在研究近江牡蛎(Ostrea rivularis)肉水解最佳条件的基础上,对水解物的营养成分进行了分析,并以小白鼠为实验对象,研究水解物的抗疲劳效果。结果表明,水解物中粗蛋白质含量达到70.27%,糖原含量为15.32%,氨基酸组成完善,并发现含有大量的牛磺酸、矿物质锌等多种具有抗疲劳作用的营养成分;动物实验证明近江牡蛎肉水解物有较好的抗疲劳效果。 Based on the optimum enzymolysis conditions of Ostrea rivularis meat,this test analyzed the nutritional components in the hydrolysates and the anti-fatigue effects of the hydrolysates was investigated through the experimental methods of mice antifatigue. The results showed that the gross protein and glycogen in the hydrolysates were 70.27% and 15.32% respectively. The distribution of amino acids was perfect and various antifatigue substances such as taurine and zinc were found present in the hydrolysates. Then the antifatigue effects of the hydrolysates were proved to be remarkable through animal experiments.
