2020年河南省干制红枣多元素含量调查及膳食暴露风险评估 被引量:4

Investigation on multi-element content of dried red jujube and assessment on dietary exposure risk in Henan province in 2020

摘要 目的了解河南省市售干制红枣微量元素含量水平,计算其污染指数,评估其潜在风险,开展多元素膳食暴露评估。方法河南部分地区随机采集市售干制红枣样品153份,采用电感耦合等离子体-质谱仪进行数据采集,检测干制红枣样品中15种微量元素含量,采用单因子污染指数法评价微量元素的污染状况,利用点评估模型评估多元素膳食暴露风险。结果2020年河南省市售干制大枣中15种元素的检出率在2.6%~100.0%之间,检出率从高到低依次为铜(100.0%)、锰(100.0%)、钡(97.4%)、镍(96.7%)、锂(96.7%)、铝(92.8%)、砷(71.2%)、钒(50.3%)、锡(35.3%)、硒(32.7%)、铅(32.7%)、铬(12.4%)、锑(11.8%)、镉(3.3%)、汞(2.6%),合格率为99.3%。铅、镉、砷、汞、铬的平均污染指数均小于0.7。普通人群和产枣区高消费人群的砷、汞、镉、铬、镍的食品安全指数IFSc<1,铅的风险暴露边界比MOE>>1。结论河南省市售干制红枣多元素含量整体安全,普通人群和高消费人群的膳食暴露风险很低。 Objective To understand the content of trace elements in red dried jujube in Henan province,calculate its pollution index,and assess its potential risk and multi-element dietary exposure in red jujube.Methods A total of 153 dried red jujube samples were collected randomly in some areas of Henan province.Data were collected by inductively coupled plasma-mass spectrometry to detect the contents of 15 trace elements in dried red jujube samples.Dietary exposure risk of multi-elements in dried red jujube samples was assessed by point assessment model.Results In 2020,the detection rate of 15 elements in dried red jujube sold in Henan province was between 2.6%and 100.0%.The detection rates from high to low were copper(100.0%),manganese(100.0%),barium(97.4%),nickel(96.7%),lithium(96.7%),aluminum(92.8%),arsenic(71.2%),vanadium(50.3%),tin(35.3%),selenium(32.7%),lead(32.7%),chromium(12.4%),antimony(11.8%),cadmium(3.3%),mercury(2.6%).The pass rate was 99.3%.The average pollution index of lead,cadmium,arsenic,mercury and chromium was less than 0.7.The safety index of arsenic,mercury,cadmium,chromium and nickel in the general population and the high-consumption population in red jujube-producing areas was less than 1,and the exposure boundary ratio of lead is far more than 1.Conclusion The multi-element content of dried red jujubes sold in Henan province is generally safe,and the dietary exposure risk in the general population and high-consumption population is very low.
