摘要
目的了解浙江省市售9种食用油中3-氯丙醇酯污染水平,评估居民经各类食用油暴露氯丙醇酯健康风险。方法于2016—2020年从浙江省农贸市场、商店、网购等场所采集不同品种食用油404份,采用气相色谱-质谱法检测3-氯丙醇含量;结合2008年浙江省城乡居民消费量调查结果,应用日均暴露量和简单分布评估方法计算暴露水平,并采用目标危害系数法对浙江省4~6岁、7~10岁、11~17岁、18~59岁及60岁及以上人群消费食用油人群中3-氯丙醇酯风险进行评估。结果食用油中3-氯丙醇酯平均检出率为96.5%(390/404),平均含量为0.76 mg/kg,其中山茶油平均含量最高,为2.53 mg/kg;其次是稻米油,为2.23 mg/kg;葵花籽油、橄榄油、大豆油、调和油平均值相对较低,分别为0.21、0.42、0.47和0.57 mg/kg。同品牌不同种类的食用油中3-氯丙醇酯含量差异有统计学意义(P<0.05);不同品牌同种食用油中3-氯丙醇酯含量差异有统计学意义(P<0.05)。食用油食用人群中,不同年龄组人群摄入3-氯丙醇酯平均暴露量范围为0.46~1.50μg/(kg·BW·d),其中高消费人群(P97.5)3-氯丙醇酯暴露水平较高,儿童目标危害系数大于1的比例相对较高。结论浙江省市售的9种食用油中普遍存在3-氯丙醇酯污染,且污染水平较高,食用油高消费人群和儿童属于高风险人群。
OBJECTIVE To understand the levels of 3-chloropropanol(3-MCPD)esters in 9 kinds of edible oils in Zhejiang Province,and to assess the health risks of residents exposed to 3-MCPD esters through 9 types of edible oils.METHODS A total of 404 samples of edible oils of different brands were collected from markets,stores,online shopping in Zhejiang Province from 2016 to 2020,the occurrence of 3-MCPD esters was detected by gas chromatography mass spectrometry.Data of edible oils consumption was obtained from the survey result of urban and rural residents in Zhejiang Province in 2008.The average daily exposure(chronic daily intake)and simple distribution assessment method were used to calculate the exposure level,and target hazard quotients were used to assess the health risk of 3-chloropropanol ester for people aged 4-6,7-10,11-17,18-59,60 years old and above from the consumption of edible oils.RESULTSThe average detection rate of 3-chloropropanol esters in 404 samples was 96.5%,and the average concentration was 0.76 mg/kg.Among them,the average content of camellia oil was the highest with 2.53 mg/kg,followed by rice oil with 2.23 mg/kg;sunflower oil,olive oil,soybean oil,and blended oil have relatively low average values,respectively with 0.21,0.42,0.47 and 0.57 mg/kg.There were significant differences in 3-MCPD ester content in different types of edible oils of the same brand(P<0.05),and differences were statistically significant in 3-MCPD esters content in different brands of the same kind of edible oil(P<0.05).Among the edible oil consumers,the average exposure of 3-MCPD esters in different age groups ranged from 0.46-1.50μg/(kg·BW·d).Among them,the high-consumption group(P97.5)had higher exposure level to 3-MCPD esters,and the proportion of children with THQ greater than 1 was relatively high.CONCLUSION 3-MCPD esters pollution in 9 kinds of edible oils was widespread in Zhejiang Province,and the concentrations were relatively high.People with high edible oil consumption and children were high-risk groups.
