摘要
酒体设计是根据研究酒体风味特征规律和市场需求,设计和指导企业生产出具有独特风格的白酒产品的一项技术,其基础是白酒勾调技术,是目前白酒生产过程中必不可少的重要环节,它对减少企业产品出厂批次差,稳定酒体质量,提高名优酒比率起着至关重要的作用。通过介绍酒体设计的概念意义和黄鹤楼酒独特酒体风味质量形成原因,从而突出酒体设计在黄鹤楼酒风味质量形成中的重要作用。
Liquor body design is a technology to design and guide enterprises to produce liquor products with unique style according to the research of liquor body flavor characteristics and market demand.It plays a vital role in reducing the bad batch of the enterprise’s products,stabilizing the liquor quality,and nominating the ratio of superior liquor.This paper introduces the concept of liquor body design and the reasons for the formation of the unique liquor body flavor quality of Yellow Crane Tower wine,so as to highlight the important role of liquor body design in the formation of Yellow Crane Tower wine flavor quality.
