摘要
基酒存储是白酒生产工艺中非常重要的一个环节,良好的存储环境有利于基酒在存储过程中充分的老熟,降低辛辣感,使酒体更加绵柔醇厚,提升基酒的品质;黄鹤楼酒一直以来利用天然的洞酿车间进行基酒生产,并将生产出的基酒放置于生态洞酿车间内进行长期洞藏;本实验通过将洞藏存储基酒与非洞藏存储基酒进行对比,观察洞藏基酒和非洞藏基酒在存储过程中酒精度、电导率、总酸、总酯和各微量成分所发生的变化;品评小组对两种不同存储位置的基酒进行品评对比,通过品评得分来判断不同环境对基酒口感的促进作用。
Base liquor storage is a very important link in liquor production process.A good storage environment is conducive to base liquor aging,reducing the pungency,making the liquor more soft and mellow,and improving the quality of base liquor.Huanghelou liquor has always used the natural cave brewing workshop for base liquor production,and put the produced base liquor in the ecological cave brewing workshop for a long time In this experiment,the changes of alcohol content,electrical conductivity,total acid,total ester and various trace components of Dongcang base liquor and non Dongcang base liquor during storage were observed by comparing Dongcang storage base liquor and non Dongcang storage base liquor;the evaluation team evaluated and compared two different storage locations of base liquor,and judged the promotion of different environment on the taste of base liquor through the evaluation score effect.
