摘要
果露酒品酒师考核是从事果露酒生产、营销、文化推广等领域从业人员的职业技能资格考试。以中国酒业协会2019年果露酒品酒师培训、考核为研究背景和对象,重点考察果露酒品酒师在实践操作考核中的技能情况,并多方面探讨影响果露酒品酒师考核技能的因素。结果显示,参评人员整体水平较高,但各项实践操作成绩存在差异,企业性质和参评人员自然属性(所在地区、年龄、性别)均会影响品评实践操作成绩。露酒企业从业人员水平更高;中南、西南地区品评实践操作能力强;不同年龄段各有优势;女性有品评实践操作的性别优势。因此,在进行果露酒品酒师的培养时应充分考虑人员特点,针对短板重点培训,以提高我国果露酒品酒师的整体专业水平。
The assessment of fruit wine and liqueur tasters is a vocational skills qualification examination for those engaged in the production,marketing and cultural promotion of fruit wine and liqueur.This study used the 2019 fruit wine and liqueur taster training and assessment results of the China Alcoholic Drinks Association as the research object,focusing on the scores of fruit wine and liqueur tasters in the practical operation assessment and exploring the factors that affect the performance of this assessment in various aspects.The results showed that the overall level of the participants was high,but there were differences in the practical operation scores,and the nature of the enterprise and the natural attributes of the participants(region,age,and gender)affected the practical operation scores.The level of personnel working in liqueur enterprises was higher.The tasting practice in the south-central and southwest regions of China was stronger.Different age groups had their own advantages.And women had a gender advantage in tasting practice.Therefore,the training of fruit wine and liqueur tasters should take into account the characteristics of the personnel and focus on training for shortcomings in order to improve the overall professional level of fruit wine and liqueur tasters in China.
