摘要
【目的】分析两广二号家蚕蚕蛹在不同地域和季节的营养成分及活性物质含量并评价其品质,为筛选优质食用和药用蚕蛹原料提供参考依据。【方法】利用化学分析方法测定广西6个县(市、区)春、夏和秋季两广二号家蚕蚕蛹18个样品(分别以A1~A3代表广西横县春、夏和秋季蚕蛹样品、B1~B3代表广西象州县春、夏和秋季蚕蛹样品、C1~C3代表广西平果市春、夏和秋季蚕蛹样品、D1~D3代表广西那坡县春、夏和秋季蚕蛹样品、E1~E3代表广西宜州市宜州区春、夏和秋季蚕蛹样品、F1~F3代表广西环江县春、夏和秋季蚕蛹样品)的主要营养成分、常量微量元素、活性物质及有害矿物质元素含量,并采用隶属函数法和因子分析法进行综合评价。【结果】在18个蚕蛹样品中,蛋白含量最高的为B2(63.78%),其次为D1(62.79%);脂肪含量最高的为C1(41.70%),其次为B1(39.10%);总糖含量最高的为D3(6.11%),其次为A3(6.06%);总氨基酸含量最高的为F2(43.38%),其次为E2(42.19%);钙含量最高的为D1(2.69 g/kg),其次为F1(2.30 g/kg);镁含量最高的为A1(7.82 g/kg),其次为E1(7.04g/kg);铜含量最高的为F1(540.58 mg/kg),其次为A1(364.90 mg/kg);锌含量最高的为D1(229.36 mg/kg),其次为D3 (145.84mg/kg);铁含量最高的为F1(58.16 mg/kg),其次为E1(57.49 mg/kg);锰含量最高的为D2(28.15 mg/kg),其次为E1(23.54 mg/kg);硒含量最高的为D2(4.86 mg/kg),其次为F3 (0.81 mg/kg);多糖含量最高的为B1 (3.11%),其次为C1和D1 (均为2.40%);α-亚麻酸含量最高的为F2(12.70%),其次为C2 (12.40%);总黄酮含量最高的为A2 (10.80 g/kg),其次为B1 (10.67 g/kg);多酚含量最高的为C1(14.46 g/kg),其次为A1(14.17 g/kg);总生物碱含量最高的为D1和E1(均为2.90 g/kg),其次为C1(2.60 g/kg)。因子分析结果表明,营养成分品质综合评价分值排列前3位的样品依次为F1、D1和A1,说明广西环江县、那坡县和横县春季蚕蛹的综合营养品质较高;活性物质
【Objective】The contents of nutrients and active substances in Liangguang No.2 silkworm chrysalis in different regions and sea-sons were analyzed and their qualities were evaluated to provide reference for edible and medicine silkworm selection.【Method】Eighteen samples of silkworm chrysalis from Liangguang No.2 in spring,summer and autumn in six cities and counties of Guangxi were determined by chemical analysis(the silkworm chrysalis samples of Hengxian in spring,summer and autumn were represented by A1-A3,B1-B3 repre-sents silkworm chrysalis samples from Xiangzhou in spring,summer and autumn,C1-C3 represents silkworm chrysalis samples in spring,summer and autumn in Pingguo,D1-D3 represents silkworm chrysalis samples in spring,summer and autumn in Napo,E1-E3 represents silkworm chrysalis samples in spring,summer and autumn in Yizhou,and F1-F3 represents silkworm chrysalis samples in spring,summer and autumn in Huanjiang).The nu-trient components,major and trace elements,active substances and harmful minerals were detected,and membership function and factor analysis were used to evaluate them.【Result】In 18 silkworm chrys-alis samples,the highest protein content was B2(63.78%),followed by D1(62.79%);The highest fat content was C1(41.70%),fol-lowed by B1(39.10%);The highest total sugar content was D3(6.11%),followed by A3(6.06%);The highest content of total amino acids was found in F2(43.38%),followed by E2(42.19%);The highest calcium content was D1(2.69 g/kg),the second was F1(2.30 g/kg);The highest magnesium content was A1(7.82 g/kg),and the second was E1(7.04 g/kg);The highest copper content was F1(540.58 mg/kg),the second was A1(364.90 mg/kg);The highest zinc content was D1(229.36 mg/kg),the second was D3(145.84 mg/kg);The highest iron content was F1(58.16 mg/kg),and the second was E1(57.49 mg/kg);The highest content of manganese was D2(28.15 mg/kg),the second was E1(23.54 mg/kg);The highest selenium content was D2(4.86 mg/kg),followed by F3(0.81 mg/kg);The high-est active ingredient polysaccharide c
