摘要
中餐因其独特的美味受到全球人们的喜爱,但其在生产的过程中由于管理、操作、设备、量化等问题导致了中餐的标准化与工业化发展较难的问题。针对这些问题,可以采用建立中央厨房、建立稳定的原辅料供应模式、建立标准的中餐配菜模式、研发标准化中餐调料包、使用专用的生产操作设备及用具、制定标准化的餐饮服务等方法,全力实现中餐的标准化与工业化。
Chinese food is popular all over the world because of its unique delicacy,but its production is difficult to be standardized and industrialized because of management,operation,equipment,quantification and other problems in its production process.To solve these problems,we can establish a central kitchen,a stable supply mode of raw materials,and a standard Chinese food matching mode.Besides,it also helps to develop a standardized Chinese food seasoning package,to use special production and operation equipment and appliances,and to develop standardized catering services.Hopefully,all these measures will contribute to the standardization and industrialization of Chinese food.
