摘要
在当前我国餐饮经济持续低迷的背景下,现代餐饮的规模化发展需要连锁经营,具备集约化、标准化、专业化、产业化等现代餐饮生产特征的中央厨房,在多家知名中餐连锁企业中具有良好的运行优势并推动餐饮企业的规模化发展,在借鉴其成功发展经验的基础上探析未来中央厨房的发展趋势。
In the background of a slowing catering economy, it is necessary for modem Chinese catering indus- try to develop into chain business in its scale development. Intensified, standardized, specialized and industri- alized, central kitchen has its advantages in many a well-known Chinese chain catering business and helps promote their scale development. The thesis also explores the development trends of central kitchen with refer- ence to its successful operation.
