摘要
为研究云南树辣果实营养物质的含量,对云南树辣果实样品进行了检测和分析.结果显示,树辣果实中辣椒素含量为1.05 mg/g,二氢辣椒素含量为0.83 mg/g、蛋白质含量为15.00 g/100 g、维生素C含量为1.04 mg/g.常量元素中钾含量最高,为282.00 mg/kg,其次为钙,251.00 mg/kg,微量元素中铁含量最高,为71.30 mg/kg.不饱和脂肪酸中亚油酸含量最高,其次为油酸和亚麻酸,饱和脂肪酸中棕榈酸含量最高,其次为硬脂酸和肉豆蔻酸.本研究为开发树辣资源提供了理论依据.
In order to study the nutrient content of Yunnan Tree Chilli,the fruit samples of Yunnan Tree Chilli were tested and analyzed.The results showed that the content of capsaicin,dihydrocapsaicin,protein and vitamin C was respectively 1.05 mg/g,0.83 mg/g,15.00 g/100 g and 1.04 mg/g in the fruit of Yunnan Tree Chilli.Among the macro elements,the potassium content is the highest as 282.00 mg/kg,followed by calcium as 251.00 mg/kg.The iron content of the trace elements is the highest,71.30 mg/kg.In unsaturated fatty acids,the linoleic acid content is the highest,followed by oleic acid and linolenic acid,while in saturated fatty acids,the palmitic acid content is the highest,followed by stearic acid and myristic acid.This study provides a theoretical basis for the development of Tree Chilli resources.
