青钱柳黄酮对大豆油氧化的影响 被引量:1

摘要 本研究以青钱柳为材料,通过大孔树脂柱层析法分离纯化,制备得到纯度高于95%的青钱柳黄酮。通过DPPH、FRAP、TEAC等方法测定青钱柳黄酮的体外抗氧化活性,同时测定添加青钱柳黄酮后,不同贮藏时间(3、6、9、12、15 d),以及在模拟烹饪温度(150℃)处理5分钟后反映大豆油氧化的指标。结果表明青钱柳黄酮对于大豆油的氧化具有抑制作用且呈现剂量依赖关系,制备得到的青钱柳黄酮具有显著的抗氧化活性,并且可以有效抑制大豆油的氧化。作为一种高效的天然抗氧化剂,将青钱柳黄酮应用于食用油脂中,既可以发挥抗氧化作用,又能够保证食品安全。 In the present study, high purity(>95%) of flavonoids were purified from Cyclocarya paliurus by polyamide column chromatography. The in vitro antioxidant activity of C. paliurus flavonoids was evaluated by DPPH, FRAP and TEAC methods. Indicators reflecting the oxidation of soybean oil at different storage times(3, 6, 9, 12 and 15 d) and cooking condition(150℃ for 5 min) were also evaluated after the addition of C. paliurus flavonoids. The result showed that the inhibitory effect of C. paliurus flavonoids on the oxidation of soybean oil was dose-dependent, and significantly higher(P < 0.05) than that of the blank control. Our results suggest that C. paliurus flavonoids have strong antioxidant activity and can effectively inhibit the oxidation of soybean oil. As an efficient natural antioxidant, Cyclocarya paliurus flavonoids can be used in edible oils, which can not only exert anti-oxidation but also ensure food safety.
