摘要
果醋中含有丰富的多酚、黄酮等抗氧化成分,具有降脂减肥、抗菌、预防糖尿病、降血糖、抗疲劳等生理功能。功能性果醋已成为国内外研究的热点,文章综述了果醋的抗氧化成分和功能性研究,为后期开发新型果醋及其功能因子的研究提供了参考。
Fruit vinegar is rich in antioxidants such as polyphenols and flavonoids,and it has physiological functions of lipid lowering,slimming,antibacteria,diabetes prevention,blood sugar lowering and anti-fatigue.Functional fruit vinegar has become a research hotspot at home and abroad.This paper reviews the antioxidant components and functional research of fruit vinegar,and provides reference for the research on new-type fruit vinegar and its functional factors.
