摘要
使用行星球磨机对魔芋进行粉碎,探索研磨时间、进料粒径、转速、球料比等工艺参数对魔芋粉研磨效果的影响,并与市售魔芋精粉进行质量比较。单因素及正交试验表明,各因素对研磨效果的影响程度为:进料粒径>球料比>转速>时间。最佳工艺参数组合为:A2B3C3D3,即研磨时间2.5h,进料粒径100目,转速350r/min,球料比25∶1。市面上常见的魔芋精粉粒径以60~120目为主,占55%。该试验最优参数组合可得到近98%120目以上的魔芋精粉,其中27.7%可达400目以上,优于市售精粉。经球磨机研磨后魔芋精粉粒径减小,水分含量增加,粘度随着粒径的减小呈现先增加后减小的趋势,明度随粒径的减小而增加。
A planetary ball mill is used to crush konjac,explore the effect of grinding time,feeding particle size,rotational speed,ball-material ratio and other technological parameters on the grinding effect of konjac powder,and compare the quality with the commercially available konjac powder.The single factor and orthogonal test show that the influence degree of each factor on the grinding effect is as follows:feeding particle size>ball-material ratio>rotational speed>time.The optimum combination of process parameters is A 2B 3C 3D 3,that is the grinding time is 2.5 h,the feeding particle size is 100 mesh,the rotational speed is 350 r/min,and the ball-material ratio is 25∶1.The particle size of konjac powder in the market is mainly 60~120 mesh,accounting for 55%.In this experiment,the optimal combination of parameters can obtain nearly 98%of konjac powder with particle size above 120 mesh,among which,27.7%can reach 400 mesh or above,which is better than the commercially available refined powder.After grinding by ball mill,the particle size of konjac powder decreases,the moisture content increases,the viscosity increases firstly and then decreases with the decrease of particle size,and the brightness increases with the decrease of particle size.
