摘要
近年来,各国学者对水产类动物的研究十分丰富,源于水产品中鱼类的胶原蛋白营养价值极高,不仅可以制备各种具有生物活性的多肽,而且可以广泛应用于食品、医药、化妆品等领域。但是由于鱼类在加工制作过程中会产生大量的废物,并且这些废物约占鱼本身质量的2/3,主要由鱼皮、鱼鳞、鱼骨组成,因此为减少鱼类加工废物造成的环境污染以及提高其自身的利用价值。文章简单介绍了胶原蛋白的结构,并详细综述了鱼类胶原蛋白独特的生理功能以及在各邻域中的应用,为水产类胶原蛋白的开发与利用提供参考。
In recent years,scholars from various countries have been very rich in the research of aquatic animals.The collagen of fish in aquatic products has extremely high nutritional value.It can not only prepare various biologically active peptides,but also can be widely used in food,medicine and cosmetics, and other fields.However,due to the large amount of waste generated during the processing of fish,and the waste accounts for about two-thirds of the weight of the fish itself, most of which consists of fish skin, fish scales and fish bones, it is caused by reducing fish processing waste. Because of the environmental pollution and its own use value, this paper briefly introduces the structure of collagen, and reviews the unique physiological functions of fish collagen and its application in various neighborhoods. To provide reference for the development and utilization of aquatic collagen.
