摘要 基于应用型高校改革背景下人才培养目标,文章对食品感官评价课程的教学现状进行了分析,结合课程教学特点与教学过程中存在的问题,对教学改革进行了探索,并从教学内容与方法、考核方式、师资队伍建设、教学反馈机制及效果评价等方面提出了食品感官评价教学改革的途径,以提高学生的理论基础与实践操作能力,培养满足区域经济发展需求的应用型人才。 Based on the goal of talent cultivation under the background of the reform of applied universities, this paper analyzed the current teaching situation of the course of Food Sensory Evaluation, and explored the pedagogical reform combined with the teaching characteristics and the problems in the teaching process. From the aspects of teaching contents and methods, assessment methods, faculty building, teaching feedback mechanism and effect evaluation, this paper puts forward the ways of teaching reform of food sensory evaluation to improve the theoretical basis and practical operation ability of students and train applied talents who meet the needs of regional economic development.
