摘要
近年来,提高酵母的耐热性研究已成为国内外学者关注的热点。鉴于此,该文首先概述了酵母耐热机制方面的研究进展,接着总结了目前对酵母的耐热性改造方法及其耐热酵母在乙醇生产中的应用,最后提出可以通过基因全局调控、蛋白质质量控制体系或工程优化等方法进一步提高酵母耐热性,并期望能将理论研究应用于生产实践。
Improving the yeast thermotolerance has become the research focus by domestic and overseas scholars in recent years.In view of this,firstly,the research progress of yeast thermotolerance mechanism was summarized in this paper,and then the thermotolerance modification methods of yeast and the application in ethanol production of thermotolerant yeast were summed up.Finally,it is put forward that the yeast thermotolerance may be further improve by gene global regulation,protein quality control system or engineering optimization.At the same time,it is expected that scholars can put the theory to the ethanol production practice.
