梨新品种(系)果实货架期质地的变化 被引量:5

Fruit texture changes during shelf life of some new pear cultivars(lines)

摘要 为了了解1个新品种和5个优系梨的货架期,应用质构仪整果穿刺法,定期检测货架期果实质地参数的变化。结果表明,货架期间,6个新品种(系)果实中可溶性固形物含量变化不显著,优系Ⅲ、Ⅳ果实的制汁效果较好。6个新品种(系)果实货架期质地参数呈现出不同的变化趋势,西洋梨×东方梨的杂交后代优系Ⅴ、红宝石的货架期较短,分别为1、2周;东方梨×东方梨的杂交后代优系Ⅰ、Ⅱ、Ⅲ、Ⅳ果实的货架期较长,达20~30 d。东方梨×东方梨杂交后代与西洋梨×东方梨杂交后代果皮的各参数间均呈正相关,东方梨×东方梨杂交后代果肉的硬度、细度呈负相关,西洋梨×东方梨杂交后代果肉的硬度、细度均呈正相关。质构仪整果穿刺法能够准确地反映出梨果皮和果肉的质地品质,货架期质地参数的变化可反映出新品种(系)的最终货架期的长短。杂交后代的货架期与其母本有紧密的关系。 In order to learn the fruit shelf lifes of one new pear cultivar and five new pear superior lines,changes of texture parameters of fruits were researched by using texture analyser whole-fruit puncture method.The results show that contents of soluble solids in six new cultivars(lines) fruits did not have significant changes during shelf life,and superior lines Ⅲ and Ⅳ were better for juice processing.The texture parameters presented different trends during shelf life.The superior line Ⅴ and ‘Hongbaoshi' in the European pear×oriental pear hybrids had shorter shelf life,which were one week and two weeks,respectively,and the superior lines Ⅰ,Ⅱ,Ⅲ and Ⅳ in the oriental pear×oriental pear hybirds had longer shelf life,up to 20-30 days.Each peel parameters of oriental pear×oriental pear and European pear×oriental pear hybirds showed positive correlation,flesh hardness and fineness of oriental pear×oriental pear hybirds showed negative correlation,while flesh hardness and fineness of European pear×oriental pear hybirds showed positive correlation.The texture analyzer whole-fruit puncture method could accurately identify texture quality of pear peel and flesh,and changes of texture parameters could reflected length of shelf life of the new cultivars(lines).The shelf life of hybirds had a close relationship with its female parent.
