摘要
质地特性是果蔬极其重要的品质因素,物性分析仪所反映的主要是与力学特性有关的果蔬质地特性,其结果具有较高的灵敏性与客观性,目前已经开始运用于果蔬及其加工制品的物性研究及监测。简述了物性分析仪的原理及质地多面分析法(TPA)测试模式概况,就其在果蔬质构检测中的应用现状、注意事项进行了综述,并展望了其今后的发展方向。
Texture is the important factor of fruits and vegetables quality.Texture analyzer is about the character of force with food texture,the result is sensitive and objective.Now the use of texture analyzer is beginning in study and monitoring texture of fruits and vegetables and their products.We expatiated the principle of texture analyzer and texture profile analysis（TPA）,the application of texture analyzer in fruits and vegetables products.Also,we discussed matters needing to be attention and future of the method here.
