摘要
使用高精度TA-XT plus质构仪,对不同贮藏条件下的小玲西瓜进行压缩-穿刺试验,然后对其力学特性变化进行研究。将西瓜采后2 h内与12 d内(样本实验周期T为3 d)在不同贮藏条件下(常温贮藏、8℃冷藏和用ClO2处理后8℃冷藏)所做的穿刺测试结果进行主要力学参数(果皮强度、破裂距离、果皮脆性、果胶类物质强度、瓜瓤坚实度等)变化的分析、比较,并对每次测试的小玲西瓜进行感官评价、打分。结果表明,常温贮藏最差,8℃冷藏较好,用ClO2处理(8℃)冷藏最佳。
TA-XT plus texture analyzer with high accuracy were used to study the difference of mechanical properties of Xiaoling watermelons,based on compressed and punctured experiment for Xiaoling watermelons which were storaged under different conditions.The analysis and comparison were conducted on main mechanical parameters change(peel strength,fracture size,peel fragility,pectin matters strength,melon pulp firmness etc.) about the results of puncture test of the watermelon after post-harvest for 2 h and 12 days under different conditions: room temperature storage,cold storage in 8 ℃ and cold storage in 8 ℃ after disposed by ClO2),at the same time,the sense and grade evaluation were conducted on Xiaoling watermelon in each test.It's concluded that the worst storage condition was the room temperature with nothing treatment,8 ℃ storage was better,treatment with ClO2 and(8 ℃) cold storage were the best.
