摘要
以废弃马铃薯渣为原料,经弱碱NaHCO_3去除大部分蛋白质和脂肪,经超微粉碎后,采用植酸盐或微波辅助植酸盐螯合提取马铃薯渣中可溶性膳食纤维,通过单因素试验和正交试验确定优化工艺参数和试验结果。结果表明,马铃薯渣经超微粉碎后可溶性膳食纤维含量提高61.7%。pH为9的0.6%植酸盐溶液,按料液比1︰8(g/mL)添加于预处理后经碱洗和超微粉碎的马铃薯渣中,于95℃提取1.5h,可溶性膳食纤维得率可达38.5%。用pH为9的0.6%植酸盐溶液,按料液比1︰4(g/mL)加入到经碱洗和超微粉碎马铃薯渣中,在650W微波功率下加热4min中,可溶性膳食纤维得率可达47.6%。制备的可溶性膳食纤维为乳白色蓬松颗粒,微波辅助植酸盐提取的马铃薯渣持油力为29.2g/g。
The abandoned potato residue was used as material, firstly most protein and fat in potato residue were removed by the base of NaHCO3, then the soluble dietary fiber was extracted by chelating agent of phytate or chelating agent of phytate with microwave from potato residue after superfine comminution. Finally the optimum technology parameters and experimental result were confirmed through single factor experiment and orthogonal test. The result showed that the content of soluble dietary fiber improve 61.7% by means of superfine comminution in the potato residue. According to solid-liquid ratio of 1 : 8 (g/mL), 0.6% phytate solution with pH 9 was added into the potato residue after washing by base and superfine comminufion, and the soluble dietary fiber was extracted for 1.5 h in 95 ℃, and its yield could reach 38.5%. According to 1 : 4 solid-liquid ratio, 0.6% phytate solution with pH 9 was added into the potato residue after washing by base and superfine comminution, then the mixture was heated for 4 min in 650 W microwave. As a result, the yield of soluble dietary fiber could reach 47.6%. The soluble dietary fiber obtained was milkiness fluffy powder and its ability of absorbing oil was 29.2 g/g.
