摘要
"果蔬加工工艺学"是食品科学与工程专业非常重要的专业课,是一门应用性和实践性非常强的课程。为了适应应用型人才培养的需求,针对现行教材和传统教学中存在的问题,结合食品行业发展动态,采取案例教学法和教、学、做一体化教学形式的课程教学改革措施,有利于加深学生对理论知识的理解,更好地与食品工业生产实际相结合,提升了教学效果,并有效提高学生的应用型创新能力和综合素质。
Fruit and Vegetable Processing Technology is a very important course for students whose major in food science and engineering that is characterized by its strong application and practicality. In order to meet the demand of training applied talents, course teaching reform measures are carried out according to existing problems of current textbook and traditional teaching methods through case teaching methodology and integration teaching model of teaching,learning and practice. Those measures can help students to understand theoretical knowledge and link theory with practice better, and can effectively improve the teaching effect and enhance students’ innovative ability and comprehensive quality.
