工程教育专业认证背景下“园产食品工艺学”微课建设与实践

摘要 “园产食品工艺学”是食品科学与工程专业一门实践性很强的专业必修课程。为全面贯彻专业认证理念,培养学生主动学习和解决复杂食品工程问题的能力,对该课程引入微课建设与实践。分析了工程教育专业认证背景下“园产食品工艺学”微课的建设背景后,根据教学大纲要求梳理出重点难点,制作讲授类和演示类微视频,以超星泛雅为媒介进行微课实践和反思,从而加深学生对工程知识的理解,提升学生应用知识解决实际生产问题的能力。 Processing Technology of Horticultural Products is a practical compulsory course for food science and engineering major.In order to fully implement the concept of professional certification,and to cultivate students'ability to actively learn and solve complex food engineering problems,introduce micro-course construction and practice to this course.Firstly,the microlecture construction background of this course was analyzed,under the background of engineering education accreditation.Secondly,the key and difficult points were sorted out according to the requirements of the teaching syllabus,and then the lecturing and demonstration micro-videos were produced.The microlecture practice and reflection were carried out with super star Fanya as the media.This deepened students'understanding of engineering knowledge and improved their ability to solve practical production problems.
