摘要
米糠油具有丰富的营养价值及良好的生理功能,但随着城市化、工业化和农业集约化的高速发展,米糠油受到严重的重金属污染。利用电感耦合等离子体质谱法,对米糠油在精炼过程中的脱胶油、碱炼油、脱色油、脱臭油中铅、砷、铜、铁4种重金属含量进行分析。结果表明:随着精炼工序的逐步进行,米糠油中的重金属总含量不断减少,最终成品米糠油中重金属含量尚未对米糠油食用安全性造成危害。
Rice bran oil has high nutritional value and good physiological function. However, with the rapid development of urbanization, industrialization and agricultural intensification, rice bran oil has been severely polluted by heavy metals. By means of ICP - MS, the contents of Pb, As, Cu and Fe in degummed rice bran oil, refined rice bran oil, bleached rice bran oil and deodorized rice bran oil were determined. The results showed that along with the refining process, the total content of heavy metals in rice bran oil reduced, and the content of heavy metal in oil product had no harm for the edible safety of rice bran oil.
