摘要
对精炼各工序玉米油中磷脂含量、生育酚(V_E)含量及金属元素含量进行测定,并研究其与返色指标的相关性。结果表明:精炼过程中磷脂含量显著降低,其中脱胶碱炼工序降幅为89.44%;VE含量显著降低,脱臭工序降幅为41.31%;金属元素铁、铜含量逐渐降低,降幅分别为44.78%、43.75%;脱臭油较脱色油返色性较高;油脂色泽红值与金属元素的含量呈极显著正相关;与磷脂、V_E含量呈一定的正相关;色泽红值变化与磷脂含量呈一定的正相关,说明磷脂在油脂返色中具有重要作用。
The contents of phospholipids, tocopherols and metals in corn oil during refining were determined, and the correlations of them and color reversion were studied. The results showed that the phospholipids content decreased significantly in refining process,reducing by 89.44% in degnmming and deacidification process. The Vr content decreased significantly, reducing by 41. 31% in deodorization process. The contents of iron and copper decreased gradually in refining process, reducing by 44.78% and 43.75 % respectively. The color reversion of deodorized oil was more serious than that of bleached oil. The red value of corn oil was extremely, significantly and positively correlated with metal contents, and it was positively correlated with the contents of phospholipids and tocopherols to a certain extent. The change of red value was positively correlated with phospholipids content to a certain extent,which indicated that phospholipids had important effect on the color reversion of corn oil.
