摘要
芡实是一种药食两用的传统食材,营养丰富且具有多项生理保健功效。该文主要综述了芡实产品的加工利用现状,并阐述了芡实产品的发展对策,为芡实深加工及功能食品的开发提供借鉴。
The Euryale ferox is a kind of traditional foods used for both medicine and food,which has rich nutrition and many hygienical effects. This paper summarized mainly the present processing situation of Euryale ferox products and introduced its future development countermeasures,which could provide some references for deep processing and functional products development of Euryale ferox.
