摘要
山药含有多种功能及保健成份,近年来,国内外对其所含多糖、糖蛋白、氨基酸等功能保健成份及其应用进行了较为深入的研究。本文综述了近年来对山药中功能保健成份的研究及其在食品加工中的应用。
Yam contains a variety of functional and healthy components. Recently, relatively deep studies on functional and healthy components of yam such as polysaccharide ,glyco - protein ,amino acid and their applications have been done in domestic and abroad. The functional and healthy components of yam and their applications in food processing nowadays were discussed in this paper.
