摘要
黑茶是我国特有的一大类茶,因其独特的风味品质而深受大众喜爱。为了探讨黑茶品质形成的实质,本文从黑茶感官品质的形成和主要化学成分的变化方面对黑茶品质形成机制进行综述。
Dark tea is a large class of Chinese tea, which is loved by the public for its unique flavor quality. In order to explore the essence of Dark tea's quality formation, the dark tea's quality formation mechanism is summarized in this paper on the basis of the sensory quality formation of dark tea and the change of the main chemical composition.
