摘要
渥堆是黑茶加工中独有的工序,对黑茶品质的形成至关重要。本文综述了黑茶渥堆程度与渥堆环境条件的控制及渥堆工艺对黑茶色、香、味品质形成影响等方面的研究概况。
Piling fermentation is the unique processing of Dark Tea which play important role in the forming of its quality. This artilce reviewed the research progress in fermentation degree and control on the fermentation condtions effect on the quality forming of Dark Tea in color, flavor and taste.
