饮食蜂蜜和蜂花粉对皖南土鸡生产性能、肉品质及营养成分的影响 被引量:7

Effects of Drinking Water Supplemented with Honey and Bee Pollen on Production Performance,Meat Quality and Nutrition Components of Wannan Sanhuang Chickens

摘要 试验通过在饮水中添加蜂蜜和蜂花粉饲喂皖南土鸡研究其对鸡生产性能、肉品质及肌肉营养成分的影响。选取200只0日龄皖南土鸡,随机分为2组(每组100只),室内圈养42 d后,散养室外园林中,早晚补饲配合饲料。试验组饮水中添加蜂蜜和蜂花粉,对照组饮水中不添加。整个试验期为240 d。结果表明:饮食蜂蜜和蜂花粉的试验组鸡成活率达99%以上,屠宰率、胸肌率、肌肉a*值和嫩度显著提高(P<0.05),肌肉中天冬氨酸、苏氨酸、丝氨酸、缬氨酸、异亮氨酸、亮氨酸、酪氨酸、苯丙氨酸、组氨酸含量以及微量元素Ca和Se含量显著高于对照组(P<0.05)。提示鸡饮食蜂蜜和蜂花粉在提高生产性能的同时,极大地改善了肌肉品质和营养成分。 The experiment was conducted to study the effect of drinking water supplemented with honey and bee pollen on production performance,meat quality and nutrition componets of Wannan Sanhuang chickens. Two hundred Wannan Sanhuang chickens at 0 day of age were randomly divided into 2 groups with 100 chickens each group. After42 days raised in house,the chickens were free range in woods fed compound feed in morning and afternoon. The drinking water of experimental group was supplemented with honey and bee pollen while the control group was not supplemented.The whole experiment lasted for 240 days. The results showed that the survival rate(above 99%),dressing percentage,breast muscle rate,leg muscle rate,a^* value and tenderness of muscle of the experimental group were significantly improved(P〈0.05). Aspartic acid,threonine,serine,valine,isoleucine,leucine,tyrosine,phenylalanine,histidine levels,Ca and Se content of experimental group were significantly higher than those of the control group(P〈0.05). It suggested that drinking water supplemented with honey and bee pollen could improve production performance of chickens,meat quality and nutrition components were greatly improved at the same time.
