摘要
利用自制的磷脂酶A2(PLA2)对米糠毛油进行脱胶工艺研究,采用单因素实验及正交实验对PLA2脱胶的工艺条件进行了优化。结果表明,加入2.5 mol/L柠檬酸0.066%处理米糠毛油30min后,再加入5 mol/L的NaOH 0.07%3、%蒸馏水0、.015%PLA2,高速搅拌后,将反应体系静置于45℃下反应2 h,最终脱胶后米糠油中磷含量为9.15 mg/kg,对物理精炼米糠油的顺利进行提供了保障。
The rice bran oil degumming by self- made phospholipase A2 (PLA2 )was studied, and the degumming process conditions were optimized by single factor tests and orthogonal tests. The results showed that the phosphorus content in degummed oil was 9.15 mg/kg, when the crude rice bran oil was treated by 0.066% citric acid( concentration 2.5 moL/L) for 30 min, then 0.07% NaOH ( concentration 5 mol/ L), 3% distilled water and 0. 015% PLA2 was added and mixed by high - speed whipping, and the system reacted in static condition at 45℃ for 2 h.
