摘要
为了提高羊肉串的产量和有效监管羊肉串的品质,在长期工厂实践基础上,总结出速冻羊肉串的工业化生产工艺及配方,介绍了相关设备及工器具、工艺流程、工艺配方、操作要点、生产注意事项及该工艺的特点。核心是速冻羊肉串的生产工艺流程和配方。
In order to push up production and supervise quality of lamb shashlik, process and formula of rapid frozen lamb shashlik for industrial production is concluded in this paper, based on long term factory practice, and introduced from six aspects, namely, the main essential equipments and tools, process, formula, operation points and process description, notes and characteristics of the process. Both the process and the formula are the core content.
