摘要
以昆布为材料,采用单因素试验和正交试验的方法,以色泽、风味、组织状态为评价指标确定最佳工艺方案,制备香气浓郁,具有保健功能的荷叶昆布复合饮料。昆布汁的制备的优化条件为:提取水量为8倍,提取时间为70 min,提取温度90℃。调配的最优条件为:按体积2∶3比例将昆布原汁与荷叶原汁混合,加入0.3%麦芽糊精作为脱苦剂,0.5 g/kg山梨酸钾作为防腐剂。
In this article,we used the Laninaria as a raw material,and applied the single factor experiment and the orthogonal experiment's method.The optimized preparation condition for Laninaria juice is that: the extraction water volume is 8 times;the extraction time is 70 min,and the extraction temperature is 90 ℃.Most effective mixture condition is: the mixture proportion for the Laninaria juice and the lotus leaf juice is 2 ∶3,together with 0.3 % maltodextrin as debitterizing.The above mixture takes up 30 % in the drink,with 8 % white granulated sugar,0.06 % citric acid,0.05 % malic acid,and 0.5 g/kg potassium sorbate.
