摘要
以荷叶为主要原料,添加适量新鲜水果(菠萝)原汁及其它辅料,研制出口感优良、风味独特、营养丰富、质量稳定的果味荷叶清凉饮料。本试验通过对生产工艺、关键环节、抗氧化剂、稳定剂等进行研究,有效地解决了荷叶杀青、脱苦、护色等技术问题,确定了宜于工业化生产的配方和工艺参数。
This paper introduced the process of cold drink with fruit taste and lotus frag rance,which used lotus leaf as the main material,and fresh fruit(the pineapple)juice and other complements were added.The beverag e is of g ood taste,special flavor,g ood nutrition and stable quality.By studying the key steps of the processing ,problems of g reen g rass flavor,fermentation,debittering and color keeping were solved.The formulation and technical parameters for the industrialization of product were defined.
