摘要
茶叶是世界三大无酒精饮料之一,无盐、低糖、无脂肪,含有多种对人体健康有益的活性物质,茶多酚—茶叶中一种天然的抗氧化剂,约占干物质的15%~30%,是其它植物难以比拟的,茶多酚具有清除体内超氧阴离子自由基、抗癌、防癌、降血脂等优异功能。文章对其性质、结构和组成做了一些简单介绍,重点介绍茶多酚主要的提取、分离和纯化方法。
Tea is one of the world's three non-alcoholic beverages,no salt,low sugar,no fat,contains a variety of health beneficial substances,polyphenols-a natural tea antioxidants,dry matter of about 15 %~30 %,this is difficult to compare with other plants,polyphenols scavenge superoxide anion radical,anti-cancer,anti-cancer and blood cholesterol and other outstanding features.The paper on its nature,structure and composition did some brief introduction,highlighting the major tea polyphenol extraction,separation and purification.
