摘要
采用超滤法结合凝胶过滤色谱法,分析了不同分子量范围酪蛋白肽对生物体内自由基清除效果的影响。结果表明:酪蛋白肽分子量越小,对生物体内自由基清除率越高,抗氧化效果越好。分子量<1ku时,对羟自由基最高清除率为73.33%,DPPH最高清除率为90.94%。
The ultrafiltration method combining with gel filtration chromatography were used to analyze the effect of casein peptides with different molecular weight range on biological free radical scavenging. The results showed that the smaller the molecular weight, the higher clearance of biological free radical, the better anti-oxidant effect of casein peptides. When the molecular weight was less than lku, the hydroxyl radical scavenging rate was up to 73.33 %; DPPH clearance rate was up to 90.94 %.
