花生壳膳食纤维的提取及性能测定 被引量:16

摘要 本文采用酶法提取花生克膳食纤维并对其性能进行了测定。结果表明:花生壳中膳食纤维的含量为67.76%.其持水力分别为245.72%(20目)、495.38%(80目);特油力分别为168.59%(20目)、182.50%(80目),吸水膨胀率为3.5412g水/g样.花生壳膳食纤维的最佳脱色率为2%H2O2在30℃脱色3h。 This paper was studied the tecbnology of extracting dietary fibre from peanut shell by enzyme method. The results showed that the optimum conditions of decolouring was 2% H202,30℃, 3h. The peanut shell dietary fibre c0ntont was 67. 76% ; 3. 5412g water/g sample expansibility rate (80 mesh number) ;245. 72% (20 mesh number) and 495. 38% (80 mesh number) water holdingl;168.59% (20 mesh number) and 182. 50% (80 mesh number) oil holding respectively.
