摘要
为提高大豆蛋白质的提取率,本研究采用正交试验设计,确定其最佳提取工艺参数:选用pH7.0,15℃的水浸泡15h,70℃时用pH7.0的水按豆水比1∶10磨浆。此时大豆蛋白的提取率可达到77.86%左右。
The objective of this research was to optimum the extraction conditions based on orthogonanl trial.The soybean was soaked in pH 7.0 water for about 15 h at 15℃ ,then was ground with 10 times water,at 70 ℃ and pH 7.01Under this optimal conditions, 77.86 % soybean protein was extracted.
