摘要
本研究以山楂、大枣、枸杞、菊花4种药食同源食品为原料,添加白砂糖、柠檬酸、蜂蜜辅料经科学加工调配而成一种具有抗衰老、抗氧化、降压明目、益智的保健饮料。通过正交试验及方差分析,确定该饮品的最佳配方为:复合汁30ml、白砂糖4g、柠檬酸0.03g、蜂蜜2.5ml、水67ml(上述均为质量百分数)。通过实验,确定产品最佳稳定剂CMC-Na添加量为0.03%。
This study took hawthorn, jujube, Chinese wolfberry and chrysanthemum as primary materials and sugar, citric acid and honey as supplementary materials to makes health drink with the functions of anti-aging, antioxidation, antihypertension, improving eyesight and raising intelligence. Through orthogonal test and variance analysis, the optimal formula of the drink is determined as compound juice 30 ml, sugar 4 g, citric acid 0.03 g, honey 2.5 ml and water 67 ml. The optimum stabilizer of the drink is CMC-Na with 0.03% amount.
