摘要
膳食纤维对人体健康具有重要的生理功能和医疗作用,已被很多实验所证实。世界各国均将膳食纤维作为"第七营养素"进行开发研究。主要介绍了从大豆中获得以豆皮和子叶为原料的膳食纤维的功能性质及其在食品中的应用,以及膳食纤维对人体的营养和保健功能。对膳食纤维的定义、组成、物化特性、分离制备及生理功能进行论述,以期能为从事膳食纤维研究的工作者提供参考。
Natural cellulose is important physiological function and medical use to the people's health. These have been examined by many experiments. Every country in the world is developing and researching natural cellulose acted as Seventh Nutritional Element. This paper mainly introduces functionality of natural cellulose which uses soybean husk and cotyledon from soybean as materials and its use food and nutrient hygienical function of natural cellulose for people. Definition, composition, separated extraction and physical and chemical properties are reviewed in this paper and provide reference for researchers working on natural cellulose with hope.
