摘要
金黄色葡萄球菌肠毒素食物中毒是国内外主要细菌性食物中毒之一。本文简要阐述了金黄色葡萄球菌肠毒素的理化特性、生物活性和致病作用等方面的研究成果,并对其多种检测方法的若干新进展特别是在食品中的应用进行了重点介绍。
Staphylococcus aureus entertoxine (SE) is one of major food poisoning caused by bacteria in the world. In this paper, the research advance on its physical and chemical characteristics and biological activity and infection action was briefly described, and some new advance on its detection methods, especially in food, was introduced emphatically.
