摘要
通过对自然界中纤维素资源的分析,说明纤维素用于酒类生产的社会及经济意义,进而阐述纤维素酶的特点以及纤维素酶在酒类生产中的应用,并对其应用前景进行了展望。
Through the analysis of the cellulose resources in nature, the social and economic significance of cellulose applyed in liquor production was illustrated, as well as the characteristics of the cellulase and its application in the production of liquors. The future application of cellulase was also prospected.
