摘要
目前,纤维素酶应用于酒精生产对提高出酒率收效甚微。这主要是对纤维素酶酶学性质的认识程度还不够,所能提供的纤维素酶的成糖效果还不明显。现阶段纤维素酶在酒精生产中应用的主要作用是:可以破坏原料细胞结构,促进淀粉、蛋白质等有效成分的溶出,对提高原料出酒率有积极的辅助作用,并能降低醪液的粘度,降低输送能耗。(陶然)
Currently, due to the incomplete comprehension of zymologic properties of cellulase and the unclear sugar-producing effects of cellulase, the application of cellulase in the production of alcohol was hard to improve liquor yield. The main functions of cellulase in alcohol production included: to break cellular structure which could advance isolation of proteins and amylum etc.; to improve liquor yield of raw materials (auxiliary function); to reduce viscosity of mash liquid which could reduce transportation energy dissipation.
