摘要
运动发酵单胞菌(Zymomonas mobilis)是一种能够直接利用糖类(葡萄糖、果糖、蔗糖)产生乙醇的细菌微生物。相对传统发酵酒精的酵母菌而言,运动发酵单胞菌有其独特的、优越的性状特点,比如发酵乙醇代谢过程简单,发酵速度快、转化率高和耐受力强等。在工业运用方面具有潜在的应用价值(用于燃料乙醇、酶制剂以及酒类生产等)。主要对运动发酵单胞菌的乙醇代谢及其特点、运动发酵单胞菌的遗传育种、运动发酵单胞菌在工业运用方面的趋势进行综述。
Zymomonas mobilis is one kind of bacteria capable of utilizing sugar including glucose, fructose and sucrose to produce alcohol di-rectly. Compared with traditional Saccharomycetes, it has the unique and excellent advantages such as simple metabolism process in producing alcohol, rapid fermentation speed, high conversion rate and strong tolerance, etc. Especially, in industry, it has potential application values in fu-el ethanol production, enzyme production, and wine production, etc. In this paper, the biological characteristics,alcohol metabolism,breeding, and industrial application trend of Zymomnas mobilis were introduced.
