母乳是婴儿最理想的食物。母乳中的蛋白质和脂质在体内分别转变成氨基酸和脂肪酸,对婴儿的健康成长发挥重要作用。母乳中氨基酸和脂肪酸含量的调查可为婴儿配方奶粉的设计开发提供"黄金标准"。本研究对河北省某地区40位不同泌乳期产妇的乳汁中氨基酸和脂肪酸含量进行了分析,结果表明,母乳中18种氨基酸组成含量随着泌乳期的延长大致呈下降趋势,其中谷氨酸含量在4个泌乳阶段处于最高水平;中链脂肪酸,相对脂肪质量较低,随着泌乳期的延长在4个泌乳段相对脂肪质量各自没有显著性的变化。油酸(9C181∶)相对脂肪质量最高,在4个泌乳期的变化范围为21.97%~29.37%。其次为亚油酸,在4个泌乳阶段的变化范围为12.63%~16.36%。对于ω-3系的-α亚麻酸和DHA,在4个泌乳阶段相对脂肪含量与其他脂肪酸相比偏低。
Human milk is a ideal food to infants, amino acid and fatty acid transformed from human milk protein and fat respectively are main nutritional component and play an significant pole in the period of infant growing. The result about the content of amino acid and fatty acid in human milk can be regarded as an gold-standard to develop infant formula powder. In this study, the content of human milk amino acid and fatty acid from forty volunteers from a certain district in Hebei province who stay in four different stages are surveyed and analyzed. The result shows that the content of eighteen sorts of amino acid declines slowly in four stages, the content of glutamic acid is always the highest in these amino acid which are analyzed in four stages. In addition, the ratios of medium-chain fatty acid C6:0, C8:0, C10:0 and C11:0 to fat respectively are also low, but there is no difference to themselves in four different stages. Oleic acid relative content to fat is highest in some sorts of long- chain fatty acid in this study, whose range is 21.97%-29.37% in four different stages. The next is LA, whose range is 12.63%-16.36%. But the contents of ALA and DHA are very low comparing to other long-chain fatty acids in four different lactation stages.
