摘要
啤酒中污染菌是啤酒生产中不可避免的一种生物污染。准确、快速地检测和鉴定出啤酒中的污染菌不仅能保证啤酒品质,还体现出啤酒企业所具有的高技术水平。随着现代生物技术的发展,污染菌的检测方法也日新月异。综述了啤酒中主要种污染菌的选择性培养基和5种检测和鉴定方法,它们分别是ATP法、抗原抗体免疫法、PCR扩增法、原位杂交法和D-乳酸脱氢酶的电泳谱图法。
Beer-spoilage bacterium are inevitable in beer. Detecting and identifying them specially and rapidly can not only guarantee the qual ity of beer, but also indicate the level of technology. As the development of modem biology, the way of detecting beer-spoilage bacterium becomes variously. In this paper the selective culture mediums for each genus and other five ways of bacteria detection and identification are introduced, which are base on ATP, antigen-specific antibodies, PCR, situ hybridization and electrophoretie characterization of D-Lactate dehydrogenase respectively.
